| Food Allergy Cookbook Review: The Food Allergy Mama's Easy, Fast Family Meals Posted: 20 Feb 2013 10:50 AM PST
Today I'm very excited to share a review of a wonderful new cookbook by Kelly Rudnicki, creator of The Food Allergy Mama blog and author of The Food Allergy Mama's Baking Book. Kelly's new book, "The Food Allergy Mama's Easy, Fast Family Meals" now available to order, addresses what every food allergy parent I know needs (and that includes me): dinner ideas. If you're the parent of a child with severe food allergies, you know how hard it is to find weekday meal recipes that will work for you AND that kids will eat. With Kelly's book, problem solved. I was really happy to see so many tasty and nutritious ideas; Kelly cares about health as well as taste. ALL of Kelly's recipes are nut-free, egg-free and dairy-free. Some can be made gluten-free, by swapping out certain ingredients. Kelly gives recommendations on making allergy-friendly staples like dairy-free buttermilk. If you have dairy-free, nut-free, egg-free baking/cooking questions, Kelly's book is helpful to both the food allergy novice and veteran.
"The Food Allergy Mama's Easy, Fast Family Meals" is chock-full of great family dinner ideas like Chicken Tortilla Soup, Grandma Rudnicki's Bolognese sauce with pasta, a super-easy (and healthy) stir fry called, of course "Easiest Stir Fry," and lots of fun family ideas like an allergy-friendly Taco Bar and Baked Potato Bar. There's even a gorgeous "Egg-Free Egg Salad" for those who need to avoid eggs. Kelly doesn't only offer dinner and lunch recipes; she's also got your covered on all the goodies that accompany your main meals, like salads, appetizers, snacks and of course, her famous sweet treats. I swear I'm going to try them all, but so far I'm addicted to her Cowboy Cookies (loaded with good stuff like dried fruit, oats and chocolate) as well as her super-easy and delicious Spiced Applesauce Bars. And then there's Kelly's Favorite Chocolate Sheet Cake with Chocolate Ganache--you'd never know it's free from so many allergens. It's amazing--and it's not hard to make. What makes this book so unique is that you don't have to figure out how to change the recipes to fit your nut-free, dairy-free, egg-free needs. Kelly's done it for you--all you have to do is cook! Even people who only need to go "nut-free" like me can get a lot out of the book, as Kelly has many substitutes for peanut/tree nut in her recipes that are creative, easy and tasty. And the recipes are for everyone--allergies or not, so your family and friends without allergies will enjoy them, too. Kelly is a such a great food allergy advocate, resource and mom; I've had the pleasure of meeting her many times and some of her kiddos, too. She writes from the heart and shares personal notes throughout her book about each recipe. Reading the book is like having a really good friend cooking with you, sharing favorite recipes and the stories behind them. I can highly recommend this fabulous book and I look forward to creating many great meals from it.
